Dinner Menus for the Next 2 Weeks

Tuesday
Salmon fillets, scallopped potatoes, roasted tomatoes

Wednesday
Wholewheat pasta spirals, cheese sauce, steamed broccoli and carrots.

Thursday
Butternut Squash/chestnut loaf, slices of bacon and/or fried eggs, cucumber

Friday
Baked bean casserole, stovies, mixed salad

Saturday
Chicken and vegetable casserole, Vegie and barley casserole, chollah

Sunday
Encore Presentations with roast potatoes

Monday
Spinach soup with yoghurt and wholewheat chappatis

Tuesday
Tuna Casserole, green beans, tomatoes

Wednesday
Pepper ommelettes with new potatoes and black bean salad

Thursday
Nut Burgers with stuffed tomatoes (make extra for Sunday)

Friday
vegie sausages, broccoli cheese,(make extra for Sunday) carrots and peas

Saturday
Potato and red leicester cheese soup, chollah

Sunday
Grilled chicken breasts/quorn fillets with broccoli cheese and stuffed tomatoes

Monday
Baked potatoes, salads, tomato soup with croutons

Tuesday
Black bean soup with tortillas, sour cream, avocado and orange slices

Wednesday
Fish fingers/vegie fingers, cheesy mash, stir fried cabbage

For many of these dishes, I'll double cook the quantities to re-stock the freezer.

Wow, Dorothy, I didn't know you were such healthy eaters! (We're not!) I especially like your "encore presentations," very cute! One of the SHSers call it YOYO night, for You're On Your Own. :)

Ha! You know the expression 'Every Man for himself'? I think it refers to sailors abandonning ship. Well, that's what our breakfasts and lunches are like!
