I'm getting around to weekly menu planning again after a break where I spent a great deal of time stressed, disorganised and grabbing stuff from the freezer at the last minute. Tsk Tsk. I had a quick skim over Emilie Barnes and Sue Gregg's book The Busy Woman's Guide to Healthy Eating again for a bit of revision and inspiration.
Here we go!
Saturday
Chicken casserole (nut loaf for Jamie) with cous-cous and salad, fancy fruit yoghurts
Sunday
Brown Rice, Mushroom and Almond Pilaf, vegie sausages, broccoli, trifle
Monday
Split Pea Soup and garlic Bread, pineapple slices
Tuesday
baked fish, quorn cutlet things for Jamie, baked potatoes, coleslaw, kiwi fruit salad (melon, kiwi and red grapes)
Wednesday
Baked Parmesan Chicken, braised tofu for Jamie, wholewheat pasta salad with lots of raw vegies
Thursday
Lentil Rice Casserole (Emilie Barnes' adapted), sweet potatoes in orange sauce, vegie burgers, ice-cream
Friday
Lentil Rice burritos with leftovers from yesterday, salsa, sour cream, finely chopped salad etc, melon
Now I've written it and shopped for it, it WILL happen! {g}

DeeDee, I'm kind of flummoxed about mention of an award nomination as this blog is not one I've ever advertised and isn't even searchable at Blogspot. Can you tell me where you've seen mention of it, please?

I never have gotten in a routine of doing menus. Now I'm thinking I could just check everyone else's, emily, you, de'Etta..... and choose the best sounding meal from each every week, substitute to make them veg as needed, then call it my menu. LOL

I'm with Jodi, I've just never gotten into a routine of planning meals. I LOVE the idea of it and I know it works so beautifully for some people. For some reason I just never quite make myself do it. I do plan out (only a day or two) meals. Maybe I'm afraid of commitment. :)
