Corn Fritters

Corn Fritters
This is a recipe we like to make at this time of year with fresh corn. You can serve it with fresh sliced tomatoes from the garden and some baked squash. (B'nut or acorn squash baked with maple syrup and walnuts. Yum!)
Ingredients
400g/14 oz plain flour
300ml/10 fl oz milk
1/2 tsp baking powder
4 eggs
150g/6 oz sweetcorn
salt and freshly ground black pepper, to taste
2 tbsp fresh coriander
2 tbsp fresh parsley
1 tbsp olive oil, for frying
fresh chives, chopped, to garnish
Method
1. Place the flour, milk, baking powder, eggs, sweetcorn, seasoning and herbs into a food processor, and pulse until well mixed.
2. Remove from the processor, and spoon into a large mixing bowl. I usually throw in a handful of whole corn kernels at this point too.
3. Heat a frying pan, over a medium heat, add the oil and then spoon the fritter mixture into the hot pan, creating pancake-like fritters.
4. Cook for 3-4 minutes on each side, then place onto a serving plate, and garnish with chopped chives to serve.
I hope you enjoy it!

Oh, Dorothy, this sounds yummy. We are still getting a bit of corn from our garden! This goes in my "to try" folder.

These look soooo good and I have some fresh corn on the cob - I think I'll do this tonight....with a salad....

Oh wait - I'm going out....well maybe I'll do it for lunch. LOL

Well - I didn't get to make these because "someone" ate all the corn on the cob...but I did share the recipe with the produce co-op.
