Spagetti, Fennel and Feta Salad

I invented this. I hope you like it. I did!

Salad ingredients
I package wholewheat spagetti, broken into 1-2 inch pieces
1 package feta cheese, in small chunks
2 large tomatoes, halved and thinly sliced
1 small fennel bulb, halved and thinly sliced
1 red pepper, halved and thinly sliced
1/2 cup pine nuts
handful of black olives, halved

salad dressing

Use your favourite. I just mixed the following:
olive oil
red wine vinegar
dijon mustard
salt
freshly ground black pepper

Cook the spagetti carefully avoiding overcooking. Cool off immediately in cold water. Combine in a large bowl with all the other ingredients. Chill for an hour or so.
Enjoy!

Yum, it has so many of my favorite things, feta, pine nuts...I might try kalamata olives though instead of regular!

What a great combination of Mediterranean ingredients! I could even imagine having this heated up, with the feta sprinkled on top at the end.
